Crazy Water Fish Soup (Acqua Pazza Inspired)

Another one of those recipes that is easy to make, but healthy and delicious. Use high quality ingredients for this and you will get the best result, especially with the fish and olive oil.

Ingredients:

4 tbsp olive oil (or more)
2 garlic cloves, sliced
1 small white onion, roughly chopped
3 celery stalks, roughly chopped
2-3 carrots, roughly chopped
Several parsley leaves, plus more for garnish
Salt, to taste
½ - 1 cup (or more) water
High-quality white fish (such as Chilean sea bass)
Lemon wedges, for serving

Instructions:

Sauté the Aromatics:

Heat a large pan over medium heat and add the olive oil.
Add the garlic, onion, celery, and carrots, sautéing for about 2 minutes until fragrant.

Cook the Fish:

Add the fish to the pan along with salt and parsley.
Pour in ½ - 1 cup (or more) of water, ensuring there's enough liquid to create a flavorful broth.
Cover and let simmer for 10 minutes, or until the fish is fully cooked and tender.

Serve:

Ladle into shallow bowls, ensuring some broth is included.
Garnish with fresh parsley and a squeeze of lemon.
